So is sweet Dukkah a new concept or merely an old reinvention? Well it’s both. It’s easily known that crushed nuts and chocolate bits have been great toppers for things such as yoghurt and ice cream for a long time. So that’s nothing new.

What Dukkah brings is just like its savoury version, a rustic blend of various nuts, and other ingredients. But it’s these ingredients that make the Dukkah topping more sustenance than texture. The Dukkah topping can often BE the dessert, with the ice cream or yoghurt sort of like the milk in the cereal.

Looking at the map it’s not hard to understand all the various cross routes and paths that travelled through Egypt. The position of Egypt effectively allowed it to gain access to a wide variety of spices particular via the Silk Route that travels up the Red Sea from India and neighbouring Cairo allowing it to benefit from the far eastern spices that passed through.
